Chia seeds are filled with omega-3 fatty acids and soluble fiber that coats and heals the gut. This easy recipe mixes up quickly but takes a few hours to set up in the fridge.

This is delightful as is, but if playing in the kitchen is your jam, there are so many ways you can dress this up! Try warming (don’t boil) the coconut milk with 1 Tbsp of an herb like lavender or chamomile for five minutes. Strain out the herbs, and let it come down to room temperature. Play with flavor combinations. I love lavender with blueberry, or chamomile with strawberry. Chop or purée the fruit and add once the coconut milk has cooled.
